I am considering traveling from Sevilla to San Sebastian by train. Can you recommend the most efficient way to do this? Also, is there a night train/sleeper train that you can recommend for this trip?

There is no night train on this route.
You will have to go via Madrid, there are frequent direct trains Seville - Madrid and several direct trains Madrid - Seville.
In Madrid a change of stations will be necessary, from Atocha to Chamartin station.

renfe.com is an annoying website, it's not fast and the enquiry on the homepage takes you to a queue for a 20 minute slot to buy a ticket. If you just want to find train times go direct to https://www.renfe.com/es/en/viajar/informacion-util/horarios
As Flo said, expect to change STATIONS and not just train in Madrid. San Sebastian usually appears in bilingual form as San Sebastian/Donastia - that is one station.
If you have an Interrail/Eurail Pass this may get complicated!

You can't see directly at that horarias site how many changes you have to make, but can figure it out at the duration. There are 2 trains from Madrid on most days (8:43 and 14:50) just within 5 hours duration that are directly (chequed it at bahn.de).

Svl-Mad is ev hour on ESpanan oldest hi-speed normal gauge line in 2hr 45 mins.
Between AT, a quite beautiful estacion and Ch are ultra-frequent and very basic cercanias=local trenes, your ticket for either ride is valid on them just after/before.
Mad-Don is a few times/day, partly via new hi-speed, then gauge change and onward. Will take 4-5 hrs.
As said, on bahn.com you can also check times far more easy.
IF using a pass, canNOT RES online, must do while in ES at some counter. AND you then have to show an activated passday.
IF wanting overnite ride perse, then use a bus, EShas a very extensive, not ultra-cheap but very reliable network.
From Don/SSEb toward FR border=frontera are local trenes/trams by EuskoTren from Basque country, pass not valid, fare quite low. But Don has several different estaciones, quite close to one another.

Arend: the ....horarios page shows the entire intinery for any of the journey options it finds. In the list click on the train number/type codes in the first column and it should open a new window with the full schedules of all the trains in the journey. bahn.de can only give info that it has received from Spain and that often comes late.
